HOW TO MAKE DELICIOUS VENETIAN CROSTOLI

It’s time to celebrate one of the most fascinating Venetian traditions: Carnival!

In addition to be ready to wear masks and bizarre clothes, Carnival is a good opportunity to satisfy the palate: there is an embarrassment of choice between frittelle, castagnole, crostoli and much more!

Today, as tradition, grandmother Ida reveals her recipe in order to prepare really delicious crostoli.

DID YOU SAY CROSTOLI?

Crostoli, galani, chiacchiere, frappe… But what is the correct name?

These tasty rectangular strips made of a fried flour dough have a different name in every Italian region. For example in Venice they are called “Galani” whereas in the mainland they are known as “Crostoli” but the dough does not change. The only difference is the thickness: Galani are in fact thinner than Crostoli.

The recipe of Crostoli or Galani has ancient origins. In fact dates back to the times of the Romans who, during the Spring Festival, with the same mixture used to make lasagna, prepared sweets very similar to Crostoli, fried in lard.

Then, are you ready to follow the recipe and the advices of grandmother Ida? Wear the apron and… Let’s cook!!!

INGREDIENTS FOR 4 PERSONS

  • 500 g flour
  • 3 eggs
  • 75 g sugar
  • 50 g butter
  • 1 teaspoon of yeast
  • 1 packet of vanillin
  • 1 teaspoon of rum or grappa
  • grated rind of 1 orange
  • grated peel of 1 lemon
  • 1 pinch of salt
  • icing sugar

1. Melt the butter in a water bath and let it cool. Add sugar to butter and incorporate the eggs one at a time.

2. Add the vanillin, 1 teaspoon of rum (or grappa), the grated rind of an orange and a lemon and a pinch of salt.

3. Gradually stir in the flour and add a teaspoon of yeast. Mix all the ingredients together.

4. Take a piece of dough at a time, spread it up to obtain a thin dough. You can also use the pasta machine.

5. With a serrated washer cut the pasta in rectangular shapes or follow your taste and fantasy.

6. Fry Crostoli in abundant hot oil.

7. Once cooled, sprinkle the crostoli with icing sugar.
